The FDA Food Safety Modernization Act (FSMA), implemented in 2017, focuses on protecting food from farm to fork and ensuring that food is protected from contamination during transportation. The rule establishes the following requirements.Vehicles and transportation equipment: Vehicles and transportation equipment are designed and maintained to ensure that they do not cause the food they transport to become unsafe. For example, they must be suitable for their intended use and adequately cleanable, and capable of maintaining the temperatures required for food-safe transport.Transport Operations: Measures taken to ensure food safety during transport, such as proper temperature control, prevention of contamination of ready-to-eat foods in contact with raw foods, protection of foods from contamination by non-food items in the same or previous loads, and prevention of food cross-contact, i.e., unintentional adulteration of food allergens.
